The transverse section of turmeric rhizome shows the outermost 4 to 6 layers of brick shaped parenchymatous cork followed by corkcambium The cortex consists of thin walled rounded parenchymatous cells containing scattered vascular bundles Oleo - resin cells with brownish contents are also observed throughout the ground tissue Endodermis is well marked and starch grains ( 5 to 15 u in diameter) are abundant .
Chemical Constituents ::
Turmeric contains about 5 % of volatile oil resin abundant zingiberaceous starch grains and yellow colouring substances known as curcuminoids The chief component of curcuminoids is known as curcumin Turmerone zingiberene borneol caprylic acid are the other constituents of turmeric oil Curcumin is reported to possess anti - microbial and anti - inflammatory actions .

हल्दी में लगभग 5% वोलाटाइल ऑयल रेज़िन, बहुत ज़्यादा ज़िंगीबेरेसियस स्टार्च के दाने और पीले रंग के पदार्थ होते हैं जिन्हें करक्यूमिनॉइड्स कहते हैं। करक्यूमिनॉइड्स का मुख्य कॉम्पोनेंट करक्यूमिन, टर्मेरोन, ज़िंगीबेरीन, बोर्नियोल, कैप्रिलिक एसिड हल्दी तेल के दूसरे कॉम्पोनेंट हैं। करक्यूमिन में एंटी-माइक्रोबियल और एंटी-इंफ्लेमेटरी एक्शन होने की बात कही गई है।
