 BLACK PEPPER CHEMICAL CONSTITUENTS  :: 

Pepper contains an alkaloid piperine (5-9%) volatile oil (1-2.5%) pungent resin (6.0%) piperidine and starch (about 30%) 

The pepper volatile oil which is yellowish in colour contains mainly / -phellandrene and caryophyllene 

Standards ::

Foreign organic matter : Not more than 2.0% 

Ash     : Not more than 6.0 % 

Acid insoluble ash : Not more than 1.0% 

Crude fibre : Not more than 15% 

Uses :;

The fruits are used as aromatic stimulant stomachic and carminative it causes feeling of warmth and used as condiment it also stimulates taste -buds with increase in gastric juice The oil is mainly used as spice due to pungent taste 

Substitutes :: 

1. Piper attenuatum is found in vishakhapatnam district of Andhra pradesh and madurai and Tirunnelveli districts of Tamil Nadu 

2.Piper brachysuachytm is found in Tirunnelveli and Nilgiri districts of Tamil Nadu 

3.Piper longum is available in Tamil Nadu Andhra Pradesh and Kerala States It is also known as piplamool in Hindi It is an important substitute for the official drug

फलों का उपयोग सुगंधित, उत्तेजक, आमाशयिक और वातहर के रूप में किया जाता है। यह गर्मी का एहसास कराता है और मसाले के रूप में भी इस्तेमाल किया जाता है। यह गैस्ट्रिक जूस में वृद्धि के साथ स्वाद कलिकाओं को भी उत्तेजित करता है। इसके तेल का उपयोग मुख्य रूप से तीखे स्वाद के कारण मसाले के रूप में किया जाता है।

3. पाइपर लोंगम तमिलनाडु, आंध्र प्रदेश और केरल राज्यों में उपलब्ध है। इसे हिंदी में पिपलामूल के नाम से भी जाना जाता है। यह आधिकारिक दवा का एक महत्वपूर्ण विकल्प है।
