STARCH DESCRIPTION ::
Colour : Rice and maize starch grains are white while wheat is cream coloured and potato is slightly yellowish .
Odour : Odourless .
Taste : Mucilaginous .
Size and shape : Starch grains vary depending upon type as given below -
1. Rice starch ::
The granules are simple or compound simple granules are polyhedral 2 to 12 micron in diameter Compound granules are ovoid and 12 to 30 u *7 to 12 u in size They may contain 2 to 150 components .
2. Wheat starch ::
Simple lenticular granules which are circular or oval in shape and 5 to 50 u in diameter Granules contain hilum at the centre and concentric faintly marked striations Rarely compound granules with 2 to 4 components are also observed .
3.Maize starch ::
Granules are polyhedral or rounded 5 to 30 u in diameter with a distinct cavity in the centre or two to five rayed cleft .
4. Potato starch ::
Generally found in the form of simple granules which are sub-spherical somewhat flattened or irregularly ovoid in shape Their sizes vary from 30 to 100 u Hilum is present near the narrower end with well marked concentric striations .

दाने सिंपल या कंपाउंड होते हैं। सिंपल दाने पॉलीहेड्रल होते हैं, जिनका डायमीटर 2 से 12 माइक्रोन होता है। कंपाउंड दाने ओवॉइड होते हैं और साइज़ 12 से 30 u *7 से 12 u होते हैं। इनमें 2 से 150 कॉम्पोनेंट हो सकते हैं।
2. गेहूं का स्टार्च ::
सिंपल लेंटिकुलर दाने जो गोल या ओवल आकार के होते हैं और जिनका डायमीटर 5 से 50 u होता है। दानों के बीच में हिलम और बीच में हल्की धारियां होती हैं। कभी-कभी 2 से 4 कॉम्पोनेंट वाले कंपाउंड दाने भी देखे जाते हैं।
3. मक्के का स्टार्च ::
दाने कई फलकों वाले या गोल होते हैं, जिनका डायमीटर 5 से 30 u होता है और बीच में एक अलग कैविटी या दो से पांच किरणों वाली दरार होती है।
4. आलू का स्टार्च ::
आम तौर पर यह साधारण दानों के रूप में पाया जाता है जो आकार में सब-स्फेरिकल, थोड़े चपटे या अनियमित रूप से अंडाकार होते हैं। इनका साइज़ 30 से 100 u तक होता है। पतले सिरे के पास हिलम होता है जिस पर अच्छी तरह से निशान वाली गाढ़ी धारियां होती हैं।
