Ginger contains about 1 to 2% of volatile oil an acrid resinous matter (5-8%) and starch Zingiberene is the principal constituent of the ginger oil The pungent principle of ginger is gingerol which is yellowish oily substance while shogaol is another constituent of the oil The pungency of gingerol is destroyed by boiling with 2% potassium hydroxide

(90%) Alcohol -soluble extractive : Not less than 4.5%
Tatal ash : Not more than 6%
Water - Soluble ash : Not less than 1.7%
Uses ::
Ginger is used as a stomachic an aromatic a carminative stimulant and flavouring agent Ginger oil is used in mouth washes ginger - beverages and liquors
Storage :;
Ginger is coated with lime to improve its colour and quality and hence this particular variety is known as limed ginger
Adulterants ::
Ginger is adulterated with exhausted ginger but it can be detected by determination of water -soluble ash volatile oil content and alcohol and water soluble extractives

उपयोग:
अदरक का उपयोग आमाशयिक, सुगंधित, वातहर, उत्तेजक और स्वादवर्धक के रूप में किया जाता है। अदरक के तेल का उपयोग माउथवॉश, अदरक - पेय पदार्थ और शराब में किया जाता है।
भंडारण:;
अदरक का रंग और गुणवत्ता बेहतर बनाने के लिए उस पर चूना लगाया जाता है और इसीलिए इस विशेष किस्म को चूनायुक्त अदरक कहा जाता है।
मिलावट:
अदरक में सड़ी हुई अदरक की मिलावट की जाती है, लेकिन इसका पता पानी में घुलनशील राख, वाष्पशील तेल और अल्कोहल व पानी में घुलनशील अर्क की मात्रा के निर्धारण से लगाया जा सकता है।
