Chemical Constituents ::
The contents of guar gum are divided into water - soluble and water insoluble parts water - soluble fraction constituting about 85 % of the gum is known as guaran which is a high molecular weight hydro -colloidal polysaccharide Guaran on hydrolysis yields 35 % of galactose and 65 % of mannose which are combined through glycosidal linkage Guar gum also contains 5-7 % proteins .

ग्वार गम के हिस्से पानी में घुलने वाले और पानी में न घुलने वाले हिस्सों में बंटे होते हैं। पानी में घुलने वाला हिस्सा, जो गम का लगभग 85% होता है, उसे ग्वारन कहते हैं, जो एक हाई मॉलिक्यूलर वेट हाइड्रो-कोलाइडल पॉलीसैकराइड है। ग्वारन के हाइड्रोलिसिस पर 35% गैलेक्टोज और 65% मैनोज़ बनता है, जो ग्लाइकोसाइडल लिंकेज से जुड़ जाते हैं। ग्वार गम में 5-7% प्रोटीन भी होता है।
